Recipe: Pepper and Rice Salad

Ingredients :
  • 175 gms. long grain Rice
  • 1 red pepper
  • 2 tsp. Vinegar
  • 225 gms. frozen peas
  • 150 ml. single ream
  • Pinch of grated Nutmeg
  • Salt and pepper

How to Make Pepper and Rice Salad :
  1. Cook rice in boiling, salted water until just tender (about 12 minutes).
  2. Drain and rinse with cold water, leave to drain again.
  3. Chop pepper discarding seeds, core and stalk.
  4. Cook peas in boiling salted water for 4 minutes.
  5. Add chopped pepper and cook for a further 5 minutes.
  6. Drain and rinse with cold water, drain well again.
  7. Mix rice, peas and pepper in a bowl. Pour over cream and vinegar.
  8. Season with nutmeg, salt and pepper and mix lightly.
